Scamorza Cheese. More like a cousin of mozzarella, scamorza is made in the same way as mozzarella but is a drier, firmer cheese. Scamorza is sold in the shape of a ball or pear in both plain and smoked varieties. Scamorza melts well and is less watery than fresh mozzarella.
Serving suggestion:
Preheat oven to 220°C. Place scamorza in a small cast iron, terracotta or other ovenproof dish and bake for about 10 minutes or until the cheese has melted. Remove from the oven and drizzle with a little olive oil, if using. Serve warm with flatbread.
